and Charles Poliquin also states this fact in his latest Pod-cast on fat loss. To keep your cholesterol at the right levels we should avoid aged foods containing cholesterol  or fats, aged, stored, scrambled, mixed or whipped foods contain increased amounts of oxidised fat and cholesterol molecules and decreased amounts of anti-oxidants that prevent their oxidation and protect our arteries. Fresh foods do not present this problem. It is also known that high heat causes fats to oxidise e.g.  heating pans very hot to make an omelette, can cause the fats in the eggs to oxidise as well as the fat in the pan.

The healthiest way to eat eggs is soft poached or boiled.
