Organic Protein Pancakes - A Great Alternative to Expensive Processed Protein Bars

If you struggle to fit in foods or meals because of time constraints or you want a quick and easy snack to help keep your blood sugar stable and you don't want to spend your money on expensive highly processed protein bars then Homemade Protein Pancakes are ideal.


Here are the basic ingredients:


30g of Whey Cool or Whey Stronger Protein Powder
3 Large Whole Organic Free Range Eggs, mixed together
100g of Organic Ground Almonds
25g Melted Organic Butter
10g of Xylitol or Stevia
A Pinch Ground Celtic Sea Salt
10g Ground Organic Cinnamon
25ml Organic Rice Milk
Zest of 1 Organic Unwaxed Lime, finely grated


Mix all ingredients either by hand or in a blender, leave to rest for at least 20 minutes in the fridge covered before cooking.


Use Organic Walnut oil on a low heat for cooking.


Apart from the sweetener and sea salt, these pancakes are organic. They are wheat free, gluten free and the only diary is the butter. If you have diary intolerance and cannot handle butter, then substitute with either Avocado or Walnut Oil. Xylitol has zero effect on blood sugar levels so are a great addition on the Paleo or Low Carb Diet.


Cook on a low to medium heat in a pan using the walnut oil. Make them around 2-3 inches in diameter and allow 2- 3 minutes each. This recipe will produce a batch of around 10 - 12 pancakes.


I topped them with almond butter and cashew butter, you can also add blueberries or coconut, delicious!
